Timm Crull talks about The Terraces at Quarry Vineyards, his winery in the Napa Valley of California. The Terraces property is divided nearly equally between Cabernet Sauvignon and Zinfandel, growing both varietals in shallow volcanic loam over a deep subsoil of tufa, a pale volcanic ash that functions hydrologically in a similar manner to limestone. In a recent visit to Miami, Timm talks about making wine.

Henry interviews Viña Santa Carolina Winemaker Consuelo Marin, from Santiago, Chile. She says it’s a discipline to produce the best grapes in the best area. She tells how she discovered that some of her Merlot stock was actually Carminiere vines. Her winery has developed a new Piñot Noir. And a new reserve product, VSC, is unveiled by Consuelo during the interview. If you enjoy wine, you will love the wines of Santa Carolina. A mushroom risotto prepared by South Miami’s “Two Chefs” restaurant was the perfect wine-tasting accompaniment.
